Making in the Kitchen: Greek Spinach Veggie Burgers
Looking for a new style of veggie burger? How about Greek? I recently made these delicious spinach burgers with my sister-in-law, Gina for a family gathering. While I am definitely a meat-eater, I decided to go the healthy route and eat one of these instead of the regular burgers off the grill. They were fantastic! And so simple to make.
Here is what you’ll need:
- 1/4 c. olive oil
- 1 clove garlic, minced
- 1 t. dried oregano
- 1 t. dried dill weed
- 1 c. herb-seasoned stuffing mix
- 2 eggs, lightly beaten
- 1 10 oz. pkg. frozen chopped spinach, thawed and well-drained
- 1/2 c. feta cheese, crumbled (2 oz.)
- 4 buns
Topping suggestions:
- Low fat mayo
- sliced red onion
- sliced tomato
- lettuce
- crumbled feta
- roasted red peppers
This is pretty simple. First combine oil, garlic, oregano, dill weed, stuffing mix and 1/4 t. black pepper in a bowl. Stir in beaten eggs, spinach and feta. Mix it all together and you’re ready to shape them into patties. This recipe makes 4 good-sized patties. These cannot stand up to cooking on an actual grill. So you’ll need to use a skillet. I sprayed it with olive oil first and heated to about medium before placing them on the skillet. They need to cook about 3-4 minutes on each side or until well-browned and heated all the way through. Serve warm with the toppers of your choosing and you’ve got yourself a healthy little burger!
